Sometimes there's nothing better than the comfort of hot apple pie with vanilla ice cream. It's such a homey Fall dessert and one that I truly love. Recently, I tried Martha's Stewart's recipe and it was delicious.
I don't have a photo of a slice of the pie because ooooopppps I forgot.

Simple Roasted Chicken with Parsnips
Up until Sunday night, I had never had a parsnip. I had seen them in the store, wondered about them, but never actually tried one. Turns out, it's a lot like a carrot/potato combo. I didn't love it but I didn't hate it. I might try a parsnip puree next.
For this simple recipe you will need:
1 whole chicken,
as many potatoes, carrots, parsnips and onions as you like or will fit in your pan.
a couple sprigs each of thyme and rosemary
olive oil
salt & pepper
Preheat oven to 375 deg
Cut veggies into big cubes, bigger than bite-sized, put in the pan, drizzle with olive oil and season with salt & pepper.
Stuff your chicken with half an onion , thyme and rosemary, place on chicken on top of veggies, drizzle with olive oil and season with salt & pepper.
Roast at 375 deg until chicken is cooked thru and juices run clear when cut, approx 1 hour.

To take pictures of your pets playing in wrapping paper Christmas morning.
To keep your Christmas tree up until New Year's Day. It's so pretty and took so long to decorate; I'm going to enjoy it until every last needle has fallen off.
To not have sent out Christmas cards this year. I'm thinking I might do Valentine's Day instead.
To be thinking about New Year Resolutions, even though I've never kept one.
To spend excessive amounts of time choosing which Sees candy to choose from the box. You never know what you're going to get.
To be sad 2011 is almost over.

Baked Alaska
Oh how I've missed my blog. It's been a crazy couple weeks since the holiday started and I took a vacation from blogging. It was hard not to break out my camera for every meal or sneak away to read posts, but it was needed and now I'm ready to get back to it.
My nephew was in charge of dessert for Christmas. He made a spectacular Baked Alaska. Layers of brownie, coffee ice cream, mint & chip ice cream, vanilla ice cream and covered in toasted meringue.
This dessert has major WOW factor. Did any of the kids in your family make something special for the holidays? Although, my nephew is a teenager so maybe kid doesn't apply to him.
I can't wait to catch-up on all the posts I've missed. Is there anything that is a Must Read?
