Black Bean Soup- Great to Pack for Lunch

Does anybody else run out of things to pack for lunch at work? I'm not really a sandwich person so I'm always hunting for recipes that make good leftovers. I've posted black bean soup before but I've since perfected the recipe. It keeps for several days in the fridge and reheats really well.


First saute over medium-high heat, one small onion diced and 2 minced cloves of garlic in approx 2 tsp of olive oil. Then add 2 cans of drained/rinsed black beans, 1 tsp cumin, 1 tsp ground coriander and 1 cup of your favorite salsa.

Then add 2-3 cups of water depending on how thick you like your soup. Bring to a bubble and then reduce to simmer for about 20 minutes. Taste your seasoning and add salt and pepper to your liking.

Then using your handy-dandy immersion blender (that you got for Christmas) or your blender, blend until pureed.


Add your favorite toppings. I like shredded cheese and avocado.
