Chicken Picatta

I'm still cooking my way through the Barefoot Contessa cookbook I received for my birthday. So far, everything I've made has been delicious.

I made chicken picatta but with a couple minor changes. I used panko instead of seasoned bread crumbs and I left out the parsley. I still haven't acquired a taste for it. You can find this recipe in Barefoot Contessa at Home.

  1. Doesn't Ina rock? A few weeks ago, I checked one of her earlier cookbooks (something about French cooking?) out from the library. There were so many great recipes in there. This looks like a good one too.
