Mini Bundts Apple Sauce Cake with Candied Ginger

I saw this cake on one of the blogs I follow, Stacey's Snacks and since I had some leftover crystallized ginger in the pantry decided to try it. I'm glad I did. It's delicious. So delicious, that I convinced myself I could call it bread and have it for breakfast the next morning.

  1. Love the mini bundt version! I have to get a mini bundt pan.
    Of course you can eat it for breakfast, it's got applesauce and raisins in it!
